Kaiserschmarren With Roasted Plums [Vegan]

The Kaiserschmarren is vegan, soy-free, nut-free and, if desired, even wheat-free (if so, it is best to replace it with light spelt flour!).

Ingredients You Need for Kaiserschmarren With Roasted Plums [Vegan]

For the Plums:

  • 1/2 cup water
  • 1 3/4 ounce sugar
  • about 20 ounces plums
  • 1 teaspoon cinnamon

For the Kaiserschmarren:

  • 5 1/4 ounces flour
  • 3/4 ounces sugar
  • 1 teaspoon baking powder
  • pinch of turmeric (for yellow color)
  • 2 cups water
  • 1 ounce raisins

How to Prepare Kaiserschmarren With Roasted Plums [Vegan]

For the Plums:

  1. Wash, core and quarter the plums.
  2. Bring water to a boil with sugar in a saucepan while stirring. As soon as the sugar has melted, add the plums and cinnamon and simmer gently until the fruits are nice and soft. It takes around 30 minutes.

For the Kaiserschmarren:

  1. Mix the flour, sugar, baking powder and turmeric. Stir in the water. The consistency should be a little more fluid than the typical pancake batter.
  2. Heat some sunflower oil in a pan. Pour the entire dough into the hot pan and spread evenly in it by swirling gently. Let the mixture freeze a little, then spread the raisins on top. Quarter the lightly baked dough and turn these quarters. Then tear everything up with two forks and let it sear until the dough is no longer raw and browned in some places.
  3. Serve the Kaiserschmarren warm with the plum roaster and sprinkle with icing sugar.

Notes

You can prepare the plum roaster the day before, then the sauce has more time to thicken. It's best to warm up again and enjoy warm with Kaiserschmarren.
