Hemp and Cashew Energy Bites [Vegan]

These little guys are super simple to make. They contain the PERFECT amount of cocoa, making them just the right amount of sweet and savory. Although, since the dough was a bit sticky, I rolled them in coconut at the end.

Ingredients You Need for Hemp and Cashew Energy Bites [Vegan]

  • 8-9 Medjool dates, soaked for approximately 30 minutes
  • 1 medium banana
  • 1 tablespoon coconut flour or vegan protein powder
  • 3 tablespoon cocoa powder
  • 1 tablespoon cinnamon
  • 1/2 cup hemp seeds
  • 1 cup raw cashews
  • 1-2 tablespoons unsweetened shredded coconut
  • 2-3 tablespoons coconut oil (optional)
  • 1 tablespoon agar agar flakes

How to Prepare Hemp and Cashew Energy Bites [Vegan]

  1. Soak pitted dates for ~30 minutes, until soft. Then chop into big chunks.
  2. Process 3/4 cup of cashews, until a course powder forms. Set aside.
  3. Add chopped dates and banana to food processor. Whiz until a thick paste forms.
  4. Add the agar flakes, cocoa powder, cinnamon, cashew flour and hemp seeds. Process until thick paste forms.
  5. At the end, add the remaining 1/4 cup of cashews and give another go in the processor. ** If it's too thick, add the coconut oil. I ended up added a little bit to loosen up the dough.
  6. Form into balls, roll in unsweetened shredded coconut, and let set in refrigerator for 1-2 hours.
  7. Balls can be stored in fridge for a week or so, or in the freezer.
