Hemp and Cashew Energy Bites [Vegan]
These little guys are super simple to make. They contain the PERFECT amount of cocoa, making them just the right amount of sweet and savory. Although, since the dough was a bit sticky, I rolled them in coconut at the end.

How to Prepare Hemp and Cashew Energy Bites [Vegan]
- Soak pitted dates for ~30 minutes, until soft. Then chop into big chunks.
- Process 3/4 cup of cashews, until a course powder forms. Set aside.
- Add chopped dates and banana to food processor. Whiz until a thick paste forms.
- Add the agar flakes, cocoa powder, cinnamon, cashew flour and hemp seeds. Process until thick paste forms.
- At the end, add the remaining 1/4 cup of cashews and give another go in the processor. ** If it's too thick, add the coconut oil. I ended up added a little bit to loosen up the dough.
- Form into balls, roll in unsweetened shredded coconut, and let set in refrigerator for 1-2 hours.
- Balls can be stored in fridge for a week or so, or in the freezer.
