Ingredients You Need for Healthy, No-Bake Peanut Butter Bars [Vegan]

For the first layer:

  • 1 1/2 cups rolled oats
  • 1 cup raisins
  • 1 1/2 cups dates, pitted
  • 1/4 cup raw almond butter

For the second layer:

  • 2/3 cup peanut butter
  • 3/4 cup dates, pitted
  • 2/3 cup soy milk

Topping (optional):

  • 1 tablespoon cacao nibs

How to Prepare Healthy, No-Bake Peanut Butter Bars [Vegan]

For the first layer:

  1. Add rolled oats to food processor, and process until slightly broken down.
  2. Add raisins, dates, and almond butter, and process until the mixture starts to stick together.
  3. If the mixture is still not sticking together well, add a few more dates.
  4. Line a square 8 inch glass dish with parchment paper.
  5. Press the mixture from the food processor into the baking dish.
  6. Set aside.

For the second layer:

  1. Rinse the food processor - you don't have to rinse extremely well.
  2. Add peanut butter, dates, and soy milk into food processor.
  3. Process until completely smooth - about 5 minutes.
  4. Add second layer on the first, using a rubber spatula.
  5. Sprinkle with cacao nibs (optional).
  6. Set in the freezer for 1-2 hours.
  7. Remove from freezer, and cut into bars.
