Ingredients You Need for Healthy No-Bake Brownies [Vegan, Gluten-Free]

For the Brownies:

  • 2 cups raw cashews
  • 1/2 cup cacao
  • pinch of salt
  • 1 1/2 cups Medjool dates, pitted
  • 3/4 cup pitted prunes
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla

For the Ganache:

  • 3 tablespoons coconut oil, melted
  • 1/2 cup cacao
  • 4 tablespoons maple syrup
  • flaked sea salt and cacao nibs for topping

How to Prepare Healthy No-Bake Brownies [Vegan, Gluten-Free]

  1. Line an 8x8-inch baking pan with parchment paper and set it aside.
  2. Add cashews, cacao, and salt in a food processor and process until fine. Next, add dates, prunes, melted coconut oil, and vanilla. Process until smooth.
  3. Press mixture into prepared pan and place in freezer for 20-30 minutes.
  4. While brownies are chilling, make the ganache by combining melted coconut oil, cacao, and maple syrup. Whisk until smooth.
  5. Pour ganache over chilled brownies and spread into an even layer. Place brownies in the refrigerator for 5-10 minutes, or until the ganache has set.
  6. Sprinkle brownies with flaked sea salt and cacao nibs.
  7. Cut into squares and enjoy!

Notes

- Store leftover brownies in the refrigerator for up to 1 week or in the freezer for up to 1 month.
