Toasted bread, grilled zucchini, and homemade vegan labneh. Labneh is a soft, spreadable Middle Eastern cheese frequently compared to greek yogurt in terms of texture and flavor. This bruschetta is a delicious, original take on the classic tomato and grilled bread antipasto. It takes just a few minutes to make and only 6 ingredients!

Grilled Zucchini and Labne Bruschetta [Vegan, Gluten-Free]

Serves

4

Ingredients

  • Vegan labneh, as needed
  • 2 medium zucchinis
  • Chives, as needed
  • 1 bunch of basil
  • 4 slices of whole wheat bread (gluten-free bread if needed)
  • Olive oil, as needed
  • Salt, as needed
  • Pepper or chili, as needed

Preparation

  1. Slice the zucchini vertically and season with oil, salt, and pepper. Gently grill each piece.
  2. Lightly grill each slice of bread until crunchy and toasted.
  3. Spread on labneh to each slice and then distribute the zucchini, chives, and basil evenly among the slices.
  4. Season with oil, salt, and pepper before serving.
