Ingredients You Need for Easy Vegan Whole Wheat Apple Cake [Vegan]

  • 2 cups whole wheat flour
  • 2 medium-sized ripe apples, peeled and roughly chopped (2 1/2 -3 cups)
  • 1 cup brown sugar (add more if apples are not sweet enough)
  • A small piece of ginger, grated
  • Juice of half a lemon
  • 1 teaspoon cinnamon powder
  • A big pinch of green cardamom powder (elaichi)
  • 1/2 cup coconut oil (or any neutral smelling oil)
  • 1 heaped teaspoon baking soda
  • 2 tablespoons chopped roasted nuts (cashews/almonds/walnuts)
  • A pinch of salt

How to Prepare Easy Vegan Whole Wheat Apple Cake [Vegan]

  1. Mix together chopped apples, brown sugar, grated ginger, lemon juice, salt, cinnamon and green cardamom powder. Keep aside for 2-3 hours.
  2. Sieve whole wheat flour and baking soda 2-3 times.
  3. In a big mixing bowl whisk the apple mixture with the coconut oil and add the chopped nuts. Gradually add the flour and mix until combined. The batter will be thick. Don’t add any extra liquid as the apples will release moisture while baking.
  4. Transfer to a greased cake mold and bake in a pre-heated oven at 350°F for 35 minutes. Let it cool for 10-15 minutes before removing it from the cake pan.
