Crunchy Peanut Butter Squares [Vegan, Gluten-Free, Refined Sugar-Free]

Calling all peanut butter fans…. These vegan peanut butter squares are just INSANE!!! They only need 5 ingredients and a few minutes of your time. Plus, vegan peanut butter squares are unbelievably simple to make -- the perfect treat to make and eat with kids. 

Ingredients You Need for Crunchy Peanut Butter Squares [Vegan, Gluten-Free, Refined Sugar-Free]

For the base:

  • 1 cup peanut butter - crunchy or smooth both work
  • 3 tablespoons coconut oil melted
  • 2 tablespoons maple syrup
  • 1 3/4 ounces puffed rice

For the chocolate topping:

  • 4 tablespoons coconut oil melted
  • 3 tablespoons maple syrup
  • 3 tablespoons + 1 teaspoon cacao powder
  • 1 Pinch salt

How to Prepare Crunchy Peanut Butter Squares [Vegan, Gluten-Free, Refined Sugar-Free]

  1. To a large mixing bowl add the peanut butter, melted coconut oil and maple syrup and mix.
  2. Add the puffed rice and mix thoroughly.
  3. Line a small baking tin with baking paper and pour in the peanut butter mix so its evenly spread and place in the freezer for 10 minutes.
  4. Meanwhile using a Bain Marie add the melted coconut oil, maple syrup and pinch of salt and stir.
  5. Slowly add in the cacao powder and mix until smooth.
  6. Remove the peanut butter mix from the freezer and evenly pour over the chocolate sauce.
  7. Place back in the freezer for 20-30 minutes until firm.
  8. Finally just simply slice into squares and they're ready to serve!

Notes

This will keep in a sealed container in the fridge for up to 5-7 days. IF you have a peanut allergy, try using another nut butter instead such as almond.
