How to Prepare Creamy Red Lentil Pasta [Vegan, Gluten-Free]
- Heat a larger pot. Once it's hot, add the olive oil, garlic, and onions and stir them for 5 minutes.
- Continue by adding your carrots and tomatoes, seasoning them with salt and black pepper, and then fry everything for another 5minutes.
- In the same pan add the lentils and water. Cover the pan and let it simmer for 15 -20 minutes (until the lentils get tender).
- While the sauce is cooking, in a separate pan boil the pasta.
- Once the sauce is cooked, serve it over the pasta.
- Top it with crushed walnuts, fresh parsley or any other topping of your choice.
Notes
This dish is best when fresh (or store the sauce separately from the pasta) because the gluten free pasta doesn't keep well.
