Ingredients

  • 1/2 head broccoli, chopped
  • 3 medium potatoes, quartered
  • 1 leek, sliced
  • 1 garlic clove, minced
  • 1 teaspoon cumin powder
  • Salt and pepper, to taste
  • Filtered water to cover vegetables

Preparation

  1. Heat a little water in a saucepan and add minced garlic, cumin and leek.
  2. Stir over medium heat for a couple of minutes.
  3. Add broccoli and potatoes and enough water to cover vegetables.
  4. Turn the heat down and allow to simmer until vegetables are tender (15-20 minutes).
  5. If desired, steam some of the left over broccoli to garnish the soup.
  6. Allow to cool a little, then transfer veggies to a blender, and blend until smooth and creamy.
  7. Serve with extra black pepper and steamed florets.
