    These cream slices are simply delicious!

    Ingredients You Need for Cream Slices [Vegan]

    For the Pastry:

    • 1.2 cups vegan puff pastry or Danish pastry

    For the Base:

    • 1.2 cups vegan whipped cream
    • 4 tablespoons custard powder
    • 1 1/2 cups almond milk
    • 1 cup soft vegetable fat
    • 5 tablespoons icing sugar

    For the Glaze:

    • raspberry jam
    • 1.2 cups icing sugar, water

    How to Prepare Cream Slices [Vegan]

    For the Pastry:

    1. Prick the puff pastry several times with a fork and bake at 356°F for 15 - 20 minutes until it is lightly browned.
    2. Allow to cool and cut into 2 equal dough sheets.

    For the Base:

    1. Whip the cream.
    2. Cook a pudding out of pudding powder and almond milk and let it cool completely. Beat fat with icing sugar until fluffy. Mix the cooled pudding in portions.
    3. Then fold in the whipped cream with a spatula.
    4. Place a rectangular baking frame around a puff pastry sheet. Spread the finished cream. Put on the second puff pastry.

    For the Glaze:

    1. Spread a thin layer of jam on the puff pastry. Mix a thick glaze out of icing sugar and a little water and spread this over the jam.
    2. Chill overnight, then cut into slices.
     

    Notes

    Nothing beats homemade jam! My dad is a passionate jam maker (why, nobody knows) who always provided us with fresh jams in the pastry shop. His homemade raspberry jam was also used for this recipe. I sifted these because the glaze looks perfect without the seeds.
