How to Prepare Protein Cookie Dough Stuffed Dates [Vegan, Gluten-Free]

  1. Make the cookie dough: In a bowl, mix together the almond flour, protein powder, almond butter and vanilla. Taste and add sweetener, if needed. This will depend on the flavor of your protein powder. Stir in chocolate chips.
  2. Line a baking sheet with parchment paper.
  3. Using 1 tablespoon of cookie dough at a time, stuff each date and then place on the baking sheet.
  4. Add the chocolate chips and coconut oil to a microwave safe bowl. Microwave for 1 minute, then stir until smooth.
  5. Using a spoon, drop a stuffed date into the melted chocolate and roll until completely covered. Remove from chocolate and set back on the baking tray to cool.
  6. Repeat with remaining dates. Set tray in the fridge for 30 minutes to set.
  7. Once dates have set, remove from tray and store in a sealed container in the fridge or the freezer.

Notes

Cookie dough can be stored in the fridge until ready to eat!
