These really taste like coffee cake crumbles with apple and a caramel glaze (I bet this would also be tasty baked if anyone wants to try it and tell me how it turns out! They are absolutely delicious and make a great hors d’oeuvre for any party. My favorite part is the raw cacao butter instead of butter. Any excuse to get healthy fats in my diet!

Coffee Cake Crumble Caramel Apple Bites [Vegan, Gluten-Free]

Ingredients

  • 5 granny smith apples
  • toothpicks
Caramel:
  • 1 tsp vanilla
  • 1 cup dates
  • 1/2 cup water
  • 5 tbsp coconut oil (OR 1/4 cup+ 1 tbsp)
  • 1/2 cup coconut milk
  • 1 1/2 tsp sea salt
  • 1 tsp coconut nectar *optional
Coffee Cake Crumble Topping:
  • 1/2 cup coconut crystals (sugar)
  • 1/4 cup mascabado sugar
  • 2 tsp lucuma Powder
  • 1 tbsp cinnamon
  • 1/4 tsp himalayan pink salt
  • 1/4 cup melted cacao butter
  • 1 cup pureed gluten-free oats (or oat flour)
  • 2 tbsp coconut oil
Optional topping for crunch:
  • 1/2 cup finely chopped walnuts, pecans or refrigerated mulberries

Preparation

For the apples:
  1. Use a melon baller to "ball" the apple bites
  2. Set toothpicks in the center of each apple ball
For the caramel:
  1. Puree all of the caramel ingredients until smooth
  2. Coat the apples in the caramel
For the crumble topping:
  1. Mix together the coconut sugar, mascabado sugar, lacuma powder, cinnnamon, flour and salt
  2. Put cacao butter in a double boiler and only keep on low heat until melted
  3. Mix together and put in fridge until the cacao butter hardens again
  4. Crumble by chopping up the cacao
  5. Sprinkle the Coffee Cake Crumble on the apples
  6. Voila!
