How to Prepare Coconut Buckwheat Oat Banana Bread With Whipped Lime Coconut Spread [Vegan]
- Preheat oven to 350ºF. Prepare a bread loaf pan by greasing it with a little coconut oil and dusting with flour.
- Blend or process the oats and buckwheat into a fine flour.
- Mix all of the dry ingredients in a large bowl. Combine all of the wet ingredients in a medium bowl. Pour wet into dry and stir until combined. Scoop batter into prepared loaf pan, smoothing the top with a spatula.
- Place in pre-heated oven and bake for 40-45 minutes, checking after 35 minutes. Bread is done when the it’s golden brown, the edges have pulled away from the pan, and a toothpick inserted into the center comes out clean. Allow to cool for 10-15 minutes or so before taking out of the pan.
