  • 2 1/2 tablespoons coffee, brewed

  • 1 cup powdered sugar
  • 1 teaspoon unsweetened soy milk
  • 1 teaspoon vanilla extract

To Make the Doughnuts:

  2. In a large mixing bowl, mix together the dry ingredients.
  3. In a small saucepan, over a low heat, melt the butter until it's smooth.
  4. In a separate bowl, mix together the vegan egg, melted butter, soy milk, and vanilla extract until the mixture is smooth.
  5. Pour the wet mixture into the dry mixture and mix it until everything is fully combined.
  6. Add the doughnut mixture into a piping bag fitted with a round tip nozzle and pipe your dough into the tins until they are 3/4 full.
  7. Pop the trays into the preheated oven and allow them to bake for 15-18 minutes. You will know they are done when you put a knife or skewer in and it comes out clean.
  8. Place the doughnuts onto a cooling rack and cool fully before glazing.

To Make the Glazes:

  1. In a mixing bowl, combine the icing sugar and coffee until the mixture is smooth and shiny.

  4. Pop them into the fridge 5 minutes.
