Cinnamon and Raisin Cookies [Vegan, Gluten-Free]



  • 2.5 ounces vegan butter
  • 5.3 ounces coconut sugar (any granulated sugar will work)
  • 1 chia egg (flax egg will also work)
  • 3.5 ounces raisins (chopped)
  • 6.2 ounces buckwheat four
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon bicarbonate of soda


  1. Pre heat oven to 345°F
  2. Add the vegan butter to a bowl with the coconut sugar and beat together.
  3. Add all the remaining ingredients and beat together until well mixed.
  4. Place teaspoons of the mixture on prepared baking sheets
  5. Bake on the middle shelf for 8–10 minutes.
  6. Leave to cool completely before enjoying.
