Ingredients You Need for Chocolate Coffee Cream Cups [Vegan, Grain-Free]

For the cups:

  • 7 ounces vegan dark chocolate

For the Coffee Layer:

  • 1 can of coconut cream (cream only)
  • 1 tablespoon of maple syrup
  • 2 tablespoons of melted vegan chocolate
  • 1 1/2 tablespoons of espresso powder

For the Cream Layer:

  • 1 can coconut cream (cream only)
  • 1 tablespoon of maple syrup
  • 1/4 teaspoon of vanilla extract
  • 1 teaspoon of espresso powder

How to Prepare Chocolate Coffee Cream Cups [Vegan, Grain-Free]

To Make the Cups:

  1. Line a cupcake pan with cupcake wrappers.
  2. Melt the chocolate.
  3. Add a tablespoon of chocolate into each cupcake wrapper and use the back of a teaspoon to smooth it up the sides. Place the cups into the freezer to set.

To Make the Coffee Layer:

  1. Place the coconut cream, maple syrup, melted chocolate, and coffee powder in a food processor/blender and whizz up until smooth.
  2. Pour or pipe into the cups until 1/2 full. Repeat for each cup then pace back into the freezer to set.

To Make the Cream Layer:

  1. Place the coconut cream, maple syrup, vanilla syrup, and coffee powder into a food processor/blender and whizz up until smooth.
  2. Pour or pipe into the cups filling them to the cup and place back into the freezer to set. You could, at this stage, add a sprinkling of grated chocolate or dusting of cocoa powder.
  3. Allow to rest at room temperature before enjoying.
