How to Prepare Chocolate Coffee Cream Cups [Vegan, Grain-Free]
To Make the Cups:
- Line a cupcake pan with cupcake wrappers.
- Melt the chocolate.
- Add a tablespoon of chocolate into each cupcake wrapper and use the back of a teaspoon to smooth it up the sides. Place the cups into the freezer to set.
To Make the Coffee Layer:
- Place the coconut cream, maple syrup, melted chocolate, and coffee powder in a food processor/blender and whizz up until smooth.
- Pour or pipe into the cups until 1/2 full. Repeat for each cup then pace back into the freezer to set.
To Make the Cream Layer:
- Place the coconut cream, maple syrup, vanilla syrup, and coffee powder into a food processor/blender and whizz up until smooth.
- Pour or pipe into the cups filling them to the cup and place back into the freezer to set. You could, at this stage, add a sprinkling of grated chocolate or dusting of cocoa powder.
- Allow to rest at room temperature before enjoying.
