Chocolate Chip Chickpea Brownies [Vegan, Gluten-Free]

Gooey, fudgy, chocolatey, and surprisingly delicious considering they're made with a can of beans! The longer they last in the refrigerator the better they get. You can enjoy these sweet treats worry-free knowing that they are gluten-free, soy-free, full of protein, and are free of refined sugars.

Ingredients You Need for Chocolate Chip Chickpea Brownies [Vegan, Gluten-Free]

  • 1 14-ounce can chickpeas, drained and rinsed (save the brine from the can)
  • 1/3 cup unsweetened peanut butter
  • 2 tablespoons coconut oil
  • 1/2 cup rice syrup, maple syrup, or agave
  • 1/2 cup coconut sugar
  • 2 teaspoon pure vanilla extract
  • 1 tablespoon aquafaba (the brine from the chickpea can)
  • 1 teaspoon cider vinegar or lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt (optional)
  • 1/2 teaspoon ground cinnamon
  • 8-10 drops chocolate essence (optional)
  • 3/4 cup vegan chocolate chips or chunks

How to Prepare Chocolate Chip Chickpea Brownies [Vegan, Gluten-Free]

  1. Preheat the oven to 360oF and line a 8x8-inch baking pan with parchment paper.
  2. Add all of the ingredients for the fudge brownies to a blender except for the chocolate.
  3. Blend until completely smooth. Stir the chocolate chips/chunks into the batter.
  4. Transfer the batter to the prepared baking dish and smooth the top.
  5. Place into the the oven and bake on the center rack for 25 to 35 minutes.
  6. Allow the bars to sit 1 hour before cutting to help them set, preferably the next day after being in the pan the refrigerator overnight.
