Chocolate Chip Almond Sea Salt Granola Bars [Vegan]
- 1 cup dates, pitted
- 1/2 cup agave
- 1 teaspoon vanilla extract
- 1 teaspoon molasses
- 1 1/2 cups rolled oats
- 1 1/2 cups rice puff cereal
- 3/4 cup finely chopped almonds
- 2 tablespoons ground flax seed meal
- 1 teaspoon flaky sea salt
- 1/3 cup chocolate chips
Preheat the oven to 300°F.
Soak dates for 15 min. in boiling water to soften. Transfer to a food processor and process with agave, vanilla, and molasses until smooth.
In a large mixing bowl, using a wooden spoon or sturdy spatula, combine the date paste with the rest of the ingredients until a thick and slightly sticky 'dough' forms.
Form mixture into a 8x4-inch log on piece of parchment paper. You may need to slightly wet your hands for this step, so the batter doesn't stick. Cut into 8 equal rectangles and arrange on a parchment-lined baking sheet. Bake for 20 min. Allow to cool for 15 min. before eating.
