As the weather cools down, nothing makes a better dinner than an oven baked squash. This recipe puts a fresh twist on the fall and winter staple but stuffing pumpkin with a salad! Garlic, basil, and parsley flavor the pumpkin while pomegranate seeds keep it sweet and refreshing!

Ingredients You Need for Chickpea Salad Stuffed Sugar Pumpkins [Vegan, Gluten-Free]

  • 1 1/4 cup cooked chickpeas
  • 2-3 tablespoons pomegranate seeds
  • 4-5 tablespoons parsley, finely chopped
  • 1 small sugar pumpkin
  • 1 tablespoon hemp seeds
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • 1 tablespoon apple cider vinegar or juice from a lemon
  • 1 teaspoon basil, dried

How to Prepare Chickpea Salad Stuffed Sugar Pumpkins [Vegan, Gluten-Free]

  1. Wash the small pumpkin and cut in half. Scoop out the seeds and place in a preheated oven with the inside facing down. Roast the pumpkin at 360°F for approximately 20 minutes. When the outside is darkened, the pumpkin should be ready.
  2. Cook, or rinse and drain, your chickpeas and combine this with the other ingredients in a bowl.
  3. When the pumpkin is done let it cool of and scrape the puree out of the pumpkin, being careful not to scrape all out. If you scrape too much out of it you will not be able to serve the salad in the pumpkin since the skin will be too thin and tear.
  4. Mix the salad, pumpkin pieces, and puree and serve in the pumpkin.
