How to Prepare ‘Chicken’ Caesar Salad [Vegan]
- Add the chickpeas to a baking tray with seasonings and cook in the oven for 10 minutes (or until golden and crispy) at 400°F.
- In the meantime, combine all the dressing ingredients (except from capers) and whisk with a fork until smooth, then add in the capers and stir
- When the chickpeas are nearly finished, prepare and chop your lettuce and plate up
- Top the lettuce with vegan chicken, ‘croutons’ and Caesar dressing
- Add more pepper if desired, then enjoy!
