How to Prepare Cherry Soda [Vegan]
- First, make the Cherry Syrup. Heat the cherries and water in a small saucepan over medium heat to a simmer. Allow to simmer for 10 minutes.
- While the cherries and water are simmering, mash the cherries to release more flavor.
- Remove from heat and strain the cherries through a fine mesh sieve. Use the back of a wooden spoon to remove as much liquid from the cherries as possible.
- Stir in stevia. Cherry syrup may be stored in an airtight container in the refrigerator for up to 1 week.
- For each serving of cherry soda: pour 3/4 cup club soda into a glass.
- Top with 1/4 cup cherry syrup and stir to combine.
