Brookie Bars [Vegan, Gluten-Free]

Ingredients
Cookie Dough:
- 1 can chickpeas (shelled)
- 1/4 cup coconut sugar
- 1/8 cup cane sugar or stevia
- 1 1/2 tablespoon powdered peanut butter or 1 scoop vanilla protein powder
- 1 teaspoon baking soda
- 2-3 teaspoons vanilla
- Dash salt
- 1/4 cup water
- 1/2 cup oat flour
- Chocolate chips
Brownies:
- 2 cups sweet potato purée (chopped, boiled, and blended 2-3 medium sweet potatoes) 1/4 cup cocoa or cacao powder
- 1/4 cup coconut sugar
- 1-2 teaspoon vanilla
- Dash salt
- 1 teaspoon baking soda
- 1/4 cup oat flour
- 1 tablespoon coconut flour
Preparation
- Combine each respective recipe’s ingredients in a high speed blender or food processor (except the chocolate chips in the cookie dough, mix those in after a dough has formed!) until smooth.
- In a lined or greased pan, place both the brownie batter and the cookie dough by spoonful. Swirl the two together to create a marbled effect and to distribute evenly.
- Bake this at 375ºF for 25-30 minutes until set and allow to cool completely before cutting. Once cool, cut into bars and top as you please, and enjoy!
