Brookie Bars [Vegan, Gluten-Free]

Cooking Time



Cookie Dough:

  • 1 can chickpeas (shelled)
  • 1/4 cup coconut sugar
  • 1/8 cup cane sugar or stevia
  • 1 1/2 tablespoon powdered peanut butter or 1 scoop vanilla protein powder
  • 1 teaspoon baking soda
  • 2-3 teaspoons vanilla
  • Dash salt
  • 1/4 cup water
  • 1/2 cup oat flour
  • Chocolate chips


  • 2 cups sweet potato purée (chopped, boiled, and blended 2-3 medium sweet potatoes) 1/4 cup cocoa or cacao powder
  • 1/4 cup coconut sugar
  • 1-2 teaspoon vanilla
  • Dash salt
  • 1 teaspoon baking soda
  • 1/4 cup oat flour
  • 1 tablespoon coconut flour


  1. Combine each respective recipe’s ingredients in a high speed blender or food processor (except the chocolate chips in the cookie dough, mix those in after a dough has formed!) until smooth.
  2. In a lined or greased pan, place both the brownie batter and the cookie dough by spoonful. Swirl the two together to create a marbled effect and to distribute evenly.
  3. Bake this at 375ºF for 25-30 minutes until set and allow to cool completely before cutting. Once cool, cut into bars and top as you please, and enjoy!
