Blue Ombre Vanilla Cheesecake

Blue Ombre Vanilla Cheesecake is fantastic! This might sound like a strange concoction but the vanilla flavor tasted delicious and the texture was so creamy. We got the blue color using blue spirulina powder, which doesn't have a strong flavor but creates amazing color.

Ingredients You Need for Blue Ombre Vanilla Cheesecake [Vegan]

For the Filling: 

  • 8.81 ounces cashews (soaked overnight)
  • 1 can full-fat coconut milk
  • 1.75 ounces condensed coconut milk
  • 2.65 ounces vegan white chocolate
  • 2 teaspoons vanilla
  • 4 teaspoons blue spirulina powder
  • 1 teaspoon agar powder

For the Base: 

  • 7 ounces oats
  • 1.75 ounces crushed almonds
  • 3.5 ounces dates (soaked)
  • 2 teaspoons agave syrup

How to Prepare Blue Ombre Vanilla Cheesecake [Vegan]

  1. To make the base, drain the soaked dates (you should soak these for 10 minutes in warm water) and add them to a high-speed blender. Add the agave syrup and blend until you get a date paste.
  2. You can add a teaspoon of water if it stays too hard. Then add the oats and crushed nuts. Blend for a few seconds. You want the mixture to be sticking together.
  3. Line a spring-form tin with parchment paper on the base. Press the base mixture firmly around the tin and ensure it is smooth and flat. You should then leave this in the fridge or freezer.
  4. Add the cashews (soaked overnight) to a high-speed blender and blend until smooth. You can add a tsp of coconut oil if the mixture is not smooth.
  5. In a pan, heat coconut milk. Add agar powder when the milk is warm. Then once the coconut milk reaches boiling point, whisk in the agar powder. Next, turn off the heat and continue to whisk for another minute. Finally, add the vegan chocolate to the pan while still hot to allow it to melt.
  6. Add the condensed coconut milk, vanilla, and coconut milk mixture from the pan in the blender with the cashews. Blend the mixture well.
  7. Working quickly before the recipe starts to set, separate the mixture into 4 roughly equal portions. For the first portion, leave the white color. In the second, add half a tsp of blue spirulina. In the third, add 1 teaspoon of blue spirulina and add the remaining blue spirulina in the last portion. Of course, you can always add more for a more vibrant blue color.
  8. Pour the mixture into the center of the tin, starting with dark blue. Add each portion from the center of the tin.
  9. Once all portions have been added, leave the cheesecake to set for 1-2 hours in the fridge.

Notes

The blue spirulina powder doesn't have a strong flavor but creates amazing color.
