Ingredients You Need for Beet Quinoa Burger [Vegan, Gluten-Free]

  • 2 cups quinoa, cooked
  • 1 cup raw beets,  washed, peeled, and grated with a box grater
  • 1/3 cup gluten-free oats, or gluten-free oat flour
  • 1 cup of black beans, drained and rinsed
  • 1/2 cup yellow onion, peeled and diced
  • 4-5 garlic cloves, peeled and minced
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • 1/2 jalapeño, diced
  • Oil

How to Prepare Beet Quinoa Burger [Vegan, Gluten-Free]

  1. Drizzle 1 tablespoon of oil into a sauté pan, adding onions and garlic over medium heat.
  2. Cook for about 3-4 minutes or until translucent.Remove from heat.
  3. In a food processor, add oats and blend down to a flour consistency. Then add the onion, garlic, quinoa, beets, black beans, spices, mustard, salt, and jalapeño. Pulse approximately 4-6 times until a coarse consistency forms.
  4. Add another drizzle of oil to your sauté pan.Using your hands, form your burgers into patties. Place carefully into your frying pan and cook for about 3-4 minutes on each side over medium heat, letting the burgers become crisp on each side. Cook in batches.
  5. Serve hot with mustard, ketchup, sliced onion, pickles, jalapeños, lettuce, or whatever you prefer.
  6. If storing, let burgers cool completely before wrapping up to refrigerate or freeze.
