Ingredients

  • 1 leek
  • 2 red onions
  • 1 red pepper
  • 1 beetroot
  • Olive oil
  • Salt
  • Turmeric
  • Red chili powder
  • Pepper

Preparation

  1. Preheat oven to 400ºF. Cut the onions, beetroot, red pepper and the leek in 1-2 cm slices. At the bottom  put the green parts of the leek and on top arrange the slices so it looks good in the tray.
  2. Add olive oil and spices on top of it and bake them with the tray covered till the vegetables are done. I like them a little bit “Al dente”. Cook the rice separate anyway you like it.
  3. Take the vegetables out of the oven and mix them with the cooked rice. Put them back in the tray and put it in the oven for another 5 – 10 minutes. You can serve it hot or cold.
