How to Prepare Baked Vegetables with Rice [Vegan]
- Preheat oven to 400ºF. Cut the onions, beetroot, red pepper and the leek in 1-2 cm slices. At the bottom put the green parts of the leek and on top arrange the slices so it looks good in the tray.
- Add olive oil and spices on top of it and bake them with the tray covered till the vegetables are done. I like them a little bit “Al dente”. Cook the rice separate anyway you like it.
- Take the vegetables out of the oven and mix them with the cooked rice. Put them back in the tray and put it in the oven for another 5 – 10 minutes. You can serve it hot or cold.
