These pretty, green puddings are super easy-to-make and only require four ingredients! Avocado lends its creamy texture to this dessert, the maple syrup and almond milk provide the sweetness, and the agar agar gives it that gelatin-like consistency. Enjoy these on their own, or feel free to dress them up with toppings like cacao bits, or frozen fruit.

Avocado and Banana Pudding [Vegan]

Ingredients

  • 1 avocado
  • 1 banana
  • 1 cup almond milk
  • 2 teaspoons agar agar
  • 1 tablespoon maple syrup (optional)

Preparation

  1. Place agar agar and almond milk into a small pot and bring to a boil. Turn it down to a simmer. Cook for about 2-3 minutes, whisking it constantly.
  2. Add banana, avocado,agar agar mix, and maple syrup to a food processor and blend, until totally smooth.
  3. Pour the mixture into 4 small silicon forms and chill in the fridge for 1-2 hours. Turn the puddings out into a plate to serve.
