Asian Rice Soup [Vegan]

Cooking Time



  • 1 onion
  • 1 clove of garlic
  • 1 tablespoon coconut oil
  • 400ml coconut milk (1 can)
  • 1 1/4 liter vegetable broth
  • 1 leek cleaned and cut into rings
  • 2 carrots
  • 200g basmati rice
  • 1 shot of lemon juice
  • 1 tablespoon curry powder
  • Salt & pepper to taste
  • Chilli powder to taste


  1. Cook the rice separately according to the package instructions. Peel the vegetables and cut into small cubes. Heat the oil in a large saucepan, add coconut oil and roast the curry powder. Add the onion and garlic cubes, stir and fry briefly with the curry powder.
  2. Now add the broth and coconut milk and bring the soup to a boil. Add the carrot cubes to the soup and simmer for 5-10 minutes. Just before the end of the rice, the leeks and lemon juice in the pot, stir well, season and serve. For the very sharp is still some chili powder with pure.
