In the heart of New York City, an exciting culinary venture is taking the West Village by storm, and it goes by the name of “The Wesley.” Led by the talented Executive Chef Santiago Astudillo, The Wesley promises an innovative dining experience that places vegetables and fresh produce at the forefront of its menu. This exceptional concept has been brought to life through a collaboration with Justin Cohen, the founder of Mulberry Hospitality.

At The Wesley, expect a culinary journey that celebrates the bounty of the earth. The menu is complete with delectable small plates designed for sharing. Highlights on the appetizer menu include the fall kale salad, the mushroom ceviche, and the crudo. For those seeking more substantial fare, entrees range from the tandoori spiced graffiti eggplant to pressed miatke. Each dish is a testament to Chef Astudillo’s commitment to fresh, seasonal ingredients and innovative flavors.

To complement the culinary offerings, General Manager Gabriel Maldonado has carefully crafted a beverage program that’s nothing short of extraordinary. The focus here is on health-forward ingredients, with offerings such as vegetable juices and gut-conscious components. The wine list, exclusively showcasing vegan, organic/biodynamic, and female-founded producers, rounds out the beverage program and offers an excellent selection to accompany your meal.

The Wesley isn’t just about the food and drinks; it’s an immersive experience from start to finish. Designed by Elmo Studios, the restaurant’s 60-seat space is divided into three distinct rooms, each embodying the health-oriented concept. As you step into the bar, or the “green room,” you’ll be greeted by a calming atmosphere, complete with a seven-foot living plant wall, washing away the hustle and bustle of the city. The “grain room” transports guests to a sunlit wheat field with its honey-colored palette, rattan ceiling, velvet banquettes, and an installation of dried grain that evokes the senses. In contrast, the “root room” exudes an intimate and moody ambiance with its velvet-draped walls and rich mahogany accents. No matter where you sit, you get an amazing experience.

“The Wesley’s location is unbeatable and it stood out as one of the most creative menus. The attention to detail and the innovative plant-based flavors presented were simple yet delicious. Not only was the food exceptional, but Chef Santi, the staff, and the crew were equally impressive. Their passion for their craft was evident in every dish served, and their warm hospitality made the entire experience even more enjoyable. It was an absolute delight!,” said Preeta Sinha, One Green Planet’s founder who was invited for a special tasting.
