It’s often asked why spring rolls in other countries aren’t as golden, flaky, and crispy as those in Vietnam. The secret for these Crispy Spring Rolls by Helen Le lies in the variety of spring roll wrappers we use here. The most common—bánh đa nem in the North and bánh tráng lề in the Central areas—are as thin as carbon paper. The only problem is that these wrappers are difficult to store and keep fresh, so few Asian grocery stores outside of Vietnam carry them. However, you can substitute Chinese spring roll pastry wrappers or Vietnamese rice paper wrappers to make these rolls. Also, be sure to check out the Tips for Crispier Spring Rolls. This recipe was inspired by chả giò, deep-fried spring rolls from South Vietnam.
