This Pepperoni Pizza Pasta by Melanie Sorrentino combines iconic, indulgent pepperoni pizza with creamy, comforting mac and cheese. And it’s all vegan of course! The recipe even includes how to make your own stretchy, authentic-tasting mozzarella “cheese” using tapioca starch and just 4 other ingredients.
5. Beet Mac and Cheese
Let’s get creative with the classic comfort food mac and cheese by throwing in your favorite in-season root veggie with Victoria Rand and Christopher Bill’s Beet Mac and Cheese! Beets are so full of nutrients and great for your health. Throwing them in this already pretty healthy vegan mac and cheese only helps elevate this to ‘eat as much as you want’ status.

This hearty Cauliflower Mac and Cheese Casserole by Buffy-Ellen Gill embodies your mac and cheese cravings in a single pan and it takes only 25 minutes to make. The creamy cashew-cauliflower cheese sauce is oh-so-flavorsome, but super light and fluffy at the same time. There will certainly be no feelings of heaviness after this meal. White pepper gives it just the right amount of kick without taking away from the core flavors of traditional mac, while mustard, nutritional yeast, and sea salt round everything out to give you a classic cheesy, yet refined dish.
