What You’ll Need:

  • 2 cups flour
  • Baking powder
  • 1/2 cup vegan butter
  • 1/2 tsp salt
  • Tbsp lemon extract
  • Tbsp White vinegar
  • Tsp vanilla extract
  • 1/2 Coconut sugar
  • 1/3 non-dairy milk
  • 1/2 cup unsweetened almond milk mixed with 1 tablespoon apple cider vinegar
  • 1/4 cup rose water
    For the Toppings (optional):
  • Crushed pistachios
  • Powdered sugar
  • Orange zest
  • Edible rose petals

Preparation:

  1. Preheat the oven to 350 degrees. Grease and line a springform cake pan with parchment paper.
  2. To a bowl, add the melted vegan butter and sugar, and whisk together. Mix in the lemon extract, rosewater, and vanilla.
  3. In a separate mixing bowl, add the milk and vinegar. Mix to combine.
  4. In the mixing bowl, add the flour, baking powder, baking soda, salt, and mix.
  5. Pour the wet mixture into the dry and stir until combined.
  6. Pour the batter into a cake pan and transfer it into the oven and bake for 35 minutes, or until golden brown.
  7. While the cake is baking, make the glaze. In a small bowl, add the powdered sugar, lemon juice, and rosewater and combine.
  8. Pour the glaze over the cake once it has had time to cool, and top with crushed pistachios, powdered sugar, orange zest, and edible rose petals.
