Often in the summertime, we are looking for something quick and easy to have for lunch or dinner—something that we can whip up quickly, that is not too heavy, and doesn’t have us working over a hot stove in the sweltering heat.
Soup is always a great go-to when time is short or we have a bunch of rogue veggies in the pantry. However, when things heat up outside, the thought of a big bowl of hot soup might not be all that appealing.
Well, it is good news that there are plenty of ways to make soups that can be hot but not overbearing, raw, chilled, or simply warmed up. Summer soups can be satisfying and filling while keeping you cool and refreshed. An added bonus is that often summer soups can be made with just a few ingredients and a blender!
