While there are some spin-offs of vegan staples like the Protein Happy Quinoa Wraps, most of the dishes here are likely to boggle your imagination. Ever had a Blueberry and Corn Pancake Sandwich with Lemony Filling? You can find that recipe in the “Rise and ‘Wich” breakfast chapter. Some might admit to craving the Retro KFC-Style Sandwich that is a take on the restaurant version.  The first time I picked up the book I had to stop and close the book at about page 114 at the Peanut Butter Banana Bacon Sandwich because my mouth was watering so much!
