    • 1 medium shallot, thinly sliced
    • 2 garlic cloves, minced
    • 1/2 cup extra-virgin olive oil
    • 1/2 cup dry white wine
    • 2 tablespoons fresh lemon juice
    • 1/2 teaspoon ground turmeric
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon sea salt
    • 1/4 teaspoon cayenne pepper
    • 1 pound broccolini or broccoli rabe
    • 1 1/2 cups cooked chickpeas (from one 15-ounce can, rinsed and drained)
    • 2 tablespoons golden raisins
    • 2 tablespoons fresh mint leaves, torn

    How to Prepare Braised Chickpeas and Broccolini with Golden Raisins [Vegan]

    1. Preheat the oven to 375°F.
    2. In a 9 × 13-inch casserole dish or large lidded ovenproof saucepan, combine the shallot, garlic, oil, wine, lemon juice, turmeric, coriander, ginger, salt, and cayenne. Whisk with a fork until well-mixed.
    3. Add the broccolini, chickpeas, and golden raisins to the dish and toss until the veggies are coated well in the oil and spices. Arrange in an even layer, cover the pan with aluminum foil or a lid, and transfer to the oven.
    4. Bake for 15 to 20 minutes until the broccolini stems are tender. Give the vegetables a toss and continue to bake, uncovered, for 5 to 10 minutes more until the sauce has reduced slightly (it will be on the brothy side) and the broccoli is completely wilted.
    5. Garnish with the mint to serve.
