    Ingredients You Need for Basil Arugula Pesto with Walnuts [Vegan]

    • 2 cups (48 g) packed basil leaves
    • 1 cup (50 g) packed arugula leaves
    • 1 cup (117 g) raw walnuts
    • 1/2 cup (68 g) raw pine nuts
    • 1/2 cup (120 ml) extra-virgin olive oil, plus more if needed
    • 2 cloves garlic (14 g), peeled and minced, plus more to taste
    • 1 tablespoon (15 ml) lemon juice, plus more if needed
    • 1/2 teaspoon sea salt, plus more to taste

    How to Prepare Basil Arugula Pesto with Walnuts [Vegan]

    Add all of the ingredients to your Vitamix and blend in short bursts for 1 minute, or until everything is well combined. Add more lemon juice and olive oil as needed to help the mixture blend. Continue blending until you have a creamy pesto. Adjust according to taste, adding more lemon juice, olive oil, salt or garlic, as desired.
