According to McKenzie Beard’s piece in the New York Post, Dr. Luigi Fontana emphasizes quality over mere elimination of meat. He recommends slowly transitioning to more plant-centric meals and experimenting with new recipes to stay inspired. His new book, Plant Power: The Essential Plant Food Guide to Enrich Your Health, underscores how nutrient-rich whole foods activate mechanisms in our bodies that slow aging, fight inflammation, and boost gut health.

Fontana cautions that not all plant-based products are automatically healthier. Ultra-processed vegan items can be packed with salt, sugar, and unhealthy fats, posing real risks for heart disease and even early death. This is why he and Chef Marzio Lanzini suggest focusing on six power food groups: whole grains, legumes, nuts, seeds, heart-healthy fats like olive oil, and a rainbow of fruits and vegetables. Combined, these provide key nutrients like fiber, antioxidants, and healthy fats that can help lower the risk of chronic illnesses while promoting overall vitality.
