What do you do when you have just a 1/2 cup of pumpkin puree leftover looking at you sadly? Why you use it to make a healthy Pumpkin Protein Smoothie! It’s a great way to get the comforting flavors of fall into a morning smoothie, and it’s also a nice change from the green smoothies. But you don’t have to wait until fall to add pumpkin in your daily smoothies because pumpkin is super high in vitamin A (280 percent dv). And to make sure this smoothie is as healthy as can be, it has 17 grams of organic plant-based protein (a complete protein with 7 g of sprouted grains, seeds and legumes) and also provides 20 percent dv of fiber. Add even more extra nutrition by sprinkling some raw pumpkin seeds and hemp seeds on top.

Ingredients

  • 1 1/2 cup homemade almond milk
  • 1/2 cup organic pumpkin puree
  • 1 tablespoon organic almond butter
  • 1 scoop vanilla protein powder
  • 1/2 teaspoon organic cinnamon powder
  • 1/4 teaspoon organic nutmeg powder
  • 1/4 teaspoon organic ginger powder

Optional Toppings

  • organic pumpkin seeds
  • organic hemp seeds

Preparation

  1. Add all ingredients in a blender and blend until smooth and creamy.
  2. Garnish with hemp seeds or pumpkin seeds, if desired.

To make the crust: put the oats and almonds into a high speed blender and blend until it turns into a thick, slightly crumbly paste. If needed or desired, add a little maple syrup, then press into two tartlet molds or whatever shapes/molds you like. Put in the fridge. To make the lemon coconut cream: put the coconut and cashews into your high speed blender and blend until it turns into a thick paste/butter. Stir in a 1/4 cup lemon juice and the maple syrup until evenly combined (or blend it in). If you'd like more lemon flavour, add more lemon juice! I like mine quite tart - no pun intended, seriously - so I used a full 1/2 cup. Spread this mixture evenly into your crusts, then let them sit in the fridge overnight or for at least a couple hours so the flavours can get to know each other. Garnish with mint, basil, lemon zest, maple syrup or whatever else you like! Life is good!

What is Raw Meal?
Can it be made at home or is it an advert product?

Garden of Life Organic RAW Meal is an energy-providing, nutrient rich, snack or meal replacement powder.
Personally I would just use hemp protein powder.
