How to Prepare Greek Baked Ziti [Vegan]
- Preheat oven to 390°F.
To Make the Cheese Sauce:
- Combine all ingredients in a blender or food processor and process until smooth.
To Make the Tomato Sauce:
- Wash the mushrooms and peel the onion. Chop both and transfer to a small sauce pan.
- Add tomatoes and bring slowly to a boil. Reduce heat and let simmer for about 10 minutes. Season with salt, pepper, and optional garlic.
To Assemble the Greek Baked Ziti:
- Cook the orzo according to the manufacturer's instructions. When drained mix with the tomato sauce and transfer to a casserole dish. Top with the vegan cheese sauce and olives. Bake for about 15-20 minutes.
