This Greek baked ziti is an easy vegan version of a traditional comfort food, with a special Mediterranean twist. It combines orzo with olives, an easy tomato sauce, and a stunning homemade cashew cheese sauce. Who knew combining Italian and Greek food could be so delicious?!

Ingredients You Need for Greek Baked Ziti [Vegan]

For the Cheese Sauce:

For the Tomato Sauce:

  • 1 14-ounce can of chopped tomatoes
  • 1 cup mushrooms
  • 1 onion
  • 2 garlic cloves (optional)
  • Salt and pepper to taste

For the Baked Ziti:

  • 14 ounces gluten-free orzo
  • Kalamata olives, pitted

How to Prepare Greek Baked Ziti [Vegan]

  1. Preheat oven to 390°F.

To Make the Cheese Sauce:

  1. Combine all ingredients in a blender or food processor and process until smooth.

To Make the Tomato Sauce:

  1. Wash the mushrooms and peel the onion. Chop both and transfer to a small sauce pan.
  2. Add tomatoes and bring slowly to a boil. Reduce heat and let simmer for about 10 minutes. Season with salt, pepper, and optional garlic.

To Assemble the Greek Baked Ziti:

  1. Cook the orzo according to the manufacturer's instructions. When drained mix with the tomato sauce and transfer to a casserole dish. Top with the vegan cheese sauce and olives. Bake for about 15-20 minutes.
