Caramel Pecan Bars [Vegan]

A base of mixed nuts and creamy nut butter, topped with a sticky-sweet date caramel. These bars are a simple and easy treat that require no baking.

Ingredients You Need for Caramel Pecan Bars [Vegan]

For the Crust:
  • 1 cup almonds
  • 1 cup pecans
  • 3 tablespoons of almond meal
  • 2 tablespoons of peanut butter
  • 2 tablespoons of coconut oil, melted
  • 1/4 cup of maple syrup
  • A dash of sea salt
For the Caramel:
  • 1 cup of dates (pitted and soaked in hot water for 15 minutes)
  • 1/4 cup of almond milk
  • 1 teaspoon of vanilla
  • A dash of sea salt
  • 1/2 cup of chopped pecans for topping

How to Prepare Caramel Pecan Bars [Vegan]

For the Crust:
  1. Add all the crust ingredients into a high speed blender and blend until a "dough" forms. It does not need to be perfect, just enough that it is broken down and sticks together. Start on a low speed and gradually increase. You also may need to stop and scrape down the sides at times, depending on how good your blender is.
  2. Place the dough into a small glass dish (8x8-inch) and press down to form an even layer.
  3. Place in the freezer.
For the Caramel:
  1. Drain the dates and place in a high speed blender with the 1/4 cup of almond milk, vanilla, and sea salt.
  2. Blend until smooth.
  3. If you feel as though the caramel sauce is too thick, add an extra splash of almond milk and blend.
  4. Pour the caramel over the crust and spread until even.
  5. Sprinkle sea salt over the caramel.
  6. Top with chopped pecans,
  7. Place back in the freezer until mostly solid (the caramel will stay sticky).
  8. Cut into squares and store in the fridge.
