Happy national zucchini day! This summer squash is readily available and in season now during the summer months. Zucchini is a great ingredient and so versatile for vegan meals and even for raw vegan dishes. There are several ways to use zucchini and your plant-based cooking, such as fritters, pasta, slaws, salads, lasagna, soup, muffins, bread, and even pudding. Are you ready to give a new recipe a whirl using fresh zucchini? Check out these zucchini filled dishes below.
Use a spiralizer to make zucchini into noodles for this sun-dried tomato pesto dish. You will also need cannellini beans, olive oil, salt, pepper and pine nuts.

These burgers are packed with nutrient-rich veggies and plenty of flavor. You might not even need to add a bun or any toppings, but rather enjoy these plain or over a bed of lettuce.

Bust out the spiralizer again for this recipe, which calls for kale, apple slices, zucchini slices, raisins, almonds and a vinaigrette made from olive oil, red wine vinegar, sherry vinegar, Dijon vinaigrette and lemon.

These raw zucchini wraps are a great way to eat a low calorie, gluten-free and healthy snack packed with nutrients. Choose any raw veggies you like such as tomatoes, pepper and cucumber, then wrap inside zucchini ribbons.
