White Bean Birthday Cake Blondies

  • 2 tablespoons ground flax
  • 6 tablespoons water
  • 1 1/2 cups cooked white beans
  • 1/4 cup melted vegan butter
  • 3/4 cup coconut sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup 1 to 1 Gluten Free Flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon sea salt
  • 2 tablespoons sprinkles

Classic Vanilla Icing

  • 1 cup icing sugar
  • 2 tablespoons neutral oil
  • 2 1/2 tablespoons non-dairy milk
  • 1/2 teaspoon vanilla extract
  • pinch of salt

How to Prepare White Bean Birthday Cake Blondies [Vegan, Gluten Free]

For the White Bean Birthday Cake:

  1. Preheat oven to 350°F and lightly grease a 9X9 baking dish.
  2. Mix flax and water, set aside for 3 minutes.
  3. In a food processor add melted vegan butter, sugar, vanilla, beans, maple syrup and flax eggs. Blend until very smooth and no clumps remain.
  4. In a mixing bowl combine flour, baking powder, salt and sprinkles.
  5. Add bean mixture to dry ingredients and mix.
  6. Bake for 25 minutes, or until toothpick comes out clean. Allow to cool in the dish for 10-15 minutes before removing and transferring to cooling rack. Top with icing and additional sprinkles (if desired) once fully cooled.
  7. Slice into desired number of servings and store in airtight container in the fridge.

For the Classic Vanilla Icing:

  1. In a mixing bowl, whisk all ingredients together. Use immediately to avoid icing becoming stiff.
