Ingredients

  • 1/4 watermelon, diced
  • 1 small jicama, diced
  • 2 scallions, chopped
  • 1/2 cup vegan sour cream
  • 1/2 tablespoon lemon juice
  • 3 ounces vegan feta cheese, optional
  • Salt and pepper to taste

Preparation

  1. Mix all ingredients in a bowl and season with salt and pepper to your liking. The longer it sits the juicier it becomes from the watermelon.
