Comforting meat-free dinners that are varied, colorful, and delicious.
Vegan food has always called my attention because it is varied, colorful, and delicious; there are surprising combinations which create extraordinary and unexpected tastes. However, the most important fact is that no animal has to get hurt in order to eat well. I went vegan in 2011 and it was the best choice I have ever made. First, I did it to save animals, but then later I realized how beneficial it was for both the environment and health. I love trying new recipes and share my vegan creations with everyone, that is why I started my blog Vegspiration, where anyone can find something to get inspired and take the path towards veganism. How to Prepare Tofu ‘Fish’ Fillet [Vegan]
To Make the Tofu "Fish" Fillets:
- Cut the tofu into thin slices. Prepare the marinade by mixing soy sauce, sesame oil, and rice vinegar in a bowl. Add tofu and let marinate for 30 minutes, then drain and reserve the marinade.
- Mix the leftover marinade with cornstarch and set aside. Cut nori sheets in half, brush with the cornstarch-marinade mixture on one side (this will act as a "glue"), and wrap the tofu slices.
- Heat a little oil in a skillet or griddle and fry the tofu for 2 minutes on both sides.
To Make the Cilantro Mojo Sauce:
- Blend ingredients in the bowl of the mixer.
To Serve:
- Serve with cilantro or green mojo, Sriracha if you like spicy, and sprinkle with a mixture of sesame seeds and flax. Serve with whatever sides you like.
