Sweet Potato-Potato Fritters [Vegan, Gluten-Free]
- 3 sweet potatoes
- 2 potatoes
- 1/4 teaspoon ginger
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt (optional)
- Puree the potatoes in a processor and mix in ginger, cinnamon, and salt.
- Slice the sweet potatoes. Combine with the potato puree.
- Over low-medium heat, coat a pan with a generous amount of cooking oil: enough to cover the entire pan. Spoon the mixture into the pan and fry until crispy on both sides.
