Ingredients You Need for Sweet Orange Quick Bread [Vegan]

  • 1 flax egg (1 tablespoon ground flaxseed soaked with 3 tablespoons water)
  • 10 pitted Deglet dates
  • 1/2 cup hot water
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ginger powder
  • 1 naval orange large
  • 2 tablespoons orange zest
  • 1 teaspoon vanilla extract
  • 1/4 cup raisins (no sugar added) optional
  • 1/4 cup raw sunflower seeds optional

How to Prepare Sweet Orange Quick Bread [Vegan]

  1. Preheat oven to 400ºF.
  2. Mix flax egg and set aside. Add hot water and pitted dates to a small bowl and set aside.
  3. Add rolled oats to food processor fitted with an S-blade and process for 30 seconds. Add ground oats, whole wheat flour, baking powder, baking soda and ginger powder to a mixing bowl.
  4. Add pitted dates and soaking water to food processor and process until smooth.
  5. Zest orange to obtain the 1 tablespoon orange zest. Peel orange. Add peeled orange (seeds removed), zest and vanilla extract to food processor (with dates) and processor until no chunks remain.
  6. Add date/orange mixture to dry mixture and stir to combine. Stir in raisins and seeds, if using. Pour into a parchment lined 9-inch loaf pan and bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool at least 10 minutes prior to slicing. Enjoy!
