Soft Rolls [Vegan]

These are the perfect rolls for – everything. They are soft, delicate, and beautiful. You can use them for sandwiches and burgers or eat them for breakfast with your favorite spread.

Ingredients You Need for Soft Rolls [Vegan]

  • 1 1/2 cups almond milk
  • 3 tablespoons ground flax seeds
  • 6 tablespoons hot water
  • 5-6 cups bread flour, adjust as needed
  • 1 1/2 teaspoons dry yeast
  • 1/4 cup vegan butter
  • 1/4 cup granulated sugar
  • 2 1/2 teaspoons salt
  • Aquafaba (liquid from a can of chickpeas), for the wash as needed (optional)

How to Prepare Soft Rolls [Vegan]

  1. Heat the almond milk to 90°F and add the yeast, then let the two sit for 5 minutes.
  2. Combine the flax meal with the hot water and let it sit for 5 minutes.
  3. Measure 5 1/2 cups of flour into a bowl.
  4. Add the sugar and salt to the flour.
  5. Add the yeast mixture and your flax mixture to the dough and mix it well.
  6. Once it starts to come together, add the vegan butter, and continue to mix it for a while. If the dough still seems sticky after 3 minutes, add a bit more flour and knead it in well.
  7. Lightly oil a bowl and place the dough inside of it.
  8. Cover the dough and let it rest, in a warm spot, until it doubles in size.
  9. Turn the dough out onto a lightly flowered surface and gently shape a 12x14x1/4-inch loaf.
  10. Cut the dough in half lengthwise and then into 4 ounce portions.
  11. Take each piece of dough and knead it lightly into a ball.
  12. Transfer each roll to a sheet pan lined with parchment paper.
  13. Cover them again and place them in a warm spot to rise for another 40 minutes.
  14. Preheat the oven to 375°F and when the rolls have finished rising, bake them for 15-22 minutes.
  15. For extra shine, glaze them with aquafaba before putting them in the oven.

Notes

Store in a Ziploc bag or an airtight container at room temperature for up to 3 days.
