    Sound the alarms! Summer’s in the air! Once the brats come out and hit the smoker, it’s an official party! These vegan brats are drenched in IPA and spiced with fennel. Add some caramelized onion and serve in a pretzel bun. Game over!

    Ingredients You Need for Smoked Beer and Fennel Bratwurst [Vegan]

    • 1 1/4 cups (125 g) vital wheat gluten
    • 1/4 cup (15 g) nutritional yeast
    • 1 teaspoon fennel seeds
    • 1 teaspoon granulated garlic
    • 1 teaspoon granulated onion
    • 1 teaspoon rubbed sage
    • 1/2 teaspoon dry mustard powder
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon freshly ground black pepper
    • 1/4 teaspoon ground allspice
    • 1/2 cup (130 g) canned cannellini beans, drained and rinsed
    • 1 tablespoon (15 g) white miso paste
    • 2 tablespoons (30 ml) soy sauce
    • 1 cup (235ml) IPA-style beer
    • 1/4 teaspoon liquid smoke

    How to Prepare Smoked Beer and Fennel Bratwurst [Vegan]

    1. Combine the wheat gluten, nutritional yeast, fennel seeds, granulated garlic, granulated onion, sage, mustard powder, smoked paprika, salt, black pepper, and allspice in a large bowl. Whisk together until thoroughly combined.
    2. Combine the beans, miso, soy sauce, beer, and liquid smoke in a food processor and process until thoroughly mixed and smooth.
    3. Add the wet ingredients to dry and mix to form a loose dough. Cover and let rest while cutting five large square sheets of aluminum foil and preparing the smoker for a 45-minute smoke session (165°–220°F [75°–105°C]).
    4. Pour 1 to 2 inches (2.5 to 5 cm) of water into a baking pan.
    5. Cut the dough into five equal pieces and shape into logs 5 to 6 inches (13 to 15 cm) long.
    6. Roll each log in foil and twist edges to seal. (You can use parchment paper in between the brats and the foil if you wish.)
    7. Place in the baking pan covered with aluminum foil in the oven and steam for 45 minutes. Remove from the oven and let rest 30 minutes, if you can.
    8. Unwrap the brats and place them in the prepared smoker and smoke for 45 minutes. Enjoy out of the smoker, dry fry in a pan, or grill for additional browning.
