How to Prepare Salted Caramel Energy Bites [Vegan]

  1. Add all the ingredients, except the coarse sea salt, to a food processor. Process until the mixture sticks together when pressed. Add water if needed, no more than 1 tablespoon at a time.
  2. Form about 12 balls by rolling the mixture in the palm of your hands. Sprinkle with coarse sea salt (optional).

Notes

For a grain-free option, try replacing the oats for more nuts. If the mixture is too dry, add a touch of water and if it’s too sticky, add more nuts or seeds. You can easily use other nuts instead of cashews. Try walnuts or pecans! For a nut-free option, try sunflower seeds. Instead of chia seeds, you can also use ground flax seeds or hemp hearts.
