Ingredients

  • 1 lettuce
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons hemp seeds
  • 2 tablespoons goji berries
  • 1 tablespoon cacao nibs
  • 1 carrot
  • 1/2 red capsicum
  • 1 handful fresh coriander
  • 4 leaves of kale (stems off)
  • 2 shallots
  • 1 avocado
  • 1 small cucumber
  • 4 tablespoons of extra virgin olive oil
  • 1/2 lemon juice
  • Purple cabbage

Preparation

  1.  Wash and cut your veggies.
  2.  Put everything in a salad bowl.
  3.  Add all your nuts, seeds and berries.
  4.  Serve with some extra virgin olive oil (or hempseed oil) and fresh lemon juice.
