Ingredients You Need for Peanut Butter Chocolate Marble Cookies [Vegan]

Peanut Butter cookie

  • 1-1/2 tablespoon melted vegan butter
  • 3 tablespoons peanut butter
  • 3 tablespoons non dairy milk
  • 1/2 teaspoon vanilla
  • 1/4 cup packed brown sugar
  • 1-1/2 tablespoon vegan cane sugar
  • 3/4 cups unbleached all purpose flour
  • Pinch of sea salt
  • 1/4 teaspoon baking soda
  • 1/3 cup chopped peanuts 

Chocolate Cookie:

  • 1-1/2 tablespoon melted vegan butter
  • 3 tablespoons non dairy milk
  • 1/2 teaspoon vanilla
  • 1/4 cup packed brown sugar
  • 1-1/2 tablespoon vegan cane sugar
  • 3/4 cups unbleached all purpose flour
  • 1/4 cup plain unsweetened cocoa powder
  • Pinch of sea salt
  • 1/4 teaspoon baking soda
  • 1/3 cup chopped vegan chocolate chips or chocolate bar

How to Prepare Peanut Butter Chocolate Marble Cookies [Vegan]

  1. Pre-heat the oven to 370˚F and line a baking sheet with parchment paper.
  2. In a medium mixing bowl add the butter for the PB cookies and melt in the microwave. 
  3. Add in the rest of the wet ingredients and mix, then stir in the dry ingredients and mix until well combined, adding the chopped peanuts last.
  4. Repeat for the chocolate cookies, melt the butter in a medium bowl, add wet ingredients and mix, stir in dry ingredients until well combined, adding chocolate chips/chunks last.
  5. Refrigerate until firm (about 2 hours or overnight) then pull apart both doughs (see picture) and then press them together to form an big rectangle of marbled dough (see picture) it should be about 1/4 inch thick.
  6. Slice into 12 and then form each cookie into a circle and place on backing sheet and flatten.
  7. Bake for 15 minutes.
